Characteristics: medium sized clusters, long pyramidal shaped. Medium sized berry, rounded but not uniform inside the cluster light peel blue coloured
Vinification:
soft crushing of the grapes with a stalk-remover. The maceration is made along with the peel for about 5-8 days at a maximum temperature of 25-27C. The conservation of the wine is in iron vats. Once the fermentation ends, the wine is racked and bottled
Wine characteristics:
ruby red coloured tends to purple, dry taste, harmonious, with discrete bod
Food matching:
it matches perfectly and easy with the complex piedmont’s cuisine, from the appetizing to the dessert
