Characteristics: medium sized clusters, compact. Medium sized berry, ellipsoidal shaped with bloom covered peel, light but hard, intense blue coloured
Vinification:
crushing of the grapes with the stalk-remover. The vinification in red with the fermentation with the peel in cement vats. The maceration takes about 8 – 10 days, then the ageing in barrels. The new wine passes some months in the iron vats with some rack
Wine characteristics:
deep red colour especially when young but turning to purple with ageing; Intensely bouquet but gentle; Sweet-and-fresh-smelling it remembers undergrowth fruits. The taste is dry, strong and light bitterish. It is a strong wine with strength, delicacy and elegance
Food matching:
it’s a full bodied wine and can be tasted with any meal. Perfectly matches the second plates, meat based
Tasting:
at a temperature of 16 – 18° C. Better if consumed in a few years, but it is also a wine that supports ageing
