Grapevine: Dolcetto
Color of the grapes: black
Characteristics: medium sized clusters, compact, long pyramidal shaped. Medium sized berry, rounded but not uniform inside the cluster light peel blue coloured
Vinification:
soft crushing of the grapes with a destemmer. The maceration is made along with the peel for about 5-8 days at a maximum temperature of 25-27°C. The conservation of the wine is in iron vats. Once the malolactic fermentation ends, the wine is racked and bottled
Wine characteristics:
rubi red coloured, tending to purple; characteristic vinous bouquet. It has a dry taste, harmonious, full-bodied and with the aging becomes soft, smooth and good persistence
Food matching:
it’s a very versatile wine. It matches perfectly with he appetizing and first dishes when delicate. The Dolcetto is the “every day wine” is the wine in the heart of Piedmont’s people. It matches perfectly and easy with the complex Piedmont’s cuisine, from the appetizing to the dessert
Tasting:
at a temperature of 16 -18°C. Better if consumed young or lightly aged (2- 3 years)
