Grapevine: Barbera

Color of the grapes: black

Characteristics: medium sized clusters, compact. Medium sized berry, ellipsoidal shaped bloom covered peel, light but hard, intense blue coloured

 

Vinification:

 crushing of the grapes with a stalk-remover. The vinification in red with the fermentation with the peel in cement vats. The maceration takes about 8 – 10 days, then the ageing in barrels. The new wine passes some months in the iron vats with some rack and then is putted in barriques where remains for some months and then bottled. The barriques are 100% of new woods

Wine characteristics:

 it’s a very delicate product, spends a little time in the barrique just to take a touch of wood taste, because if it is very strong could be difficult to drink it

Food matching:

 matches perfectly with delicate foods, first plates based on meat juice, vegetables soups, chicken and roasted white meats, with hunted meat, red meat, “bolliti misti” and spicy cheese

Tasting:

 at a temperature of 16 – 18° C. It holds well a certain period of aging
